Tivoli Brewery dates back to the late 1800’s when it first began operations in the same building it resides in today. The renovation of the historic building provides a unique brewery setting with tap room and brewery being built within the original structure. Additionally, the state-of-the-art facility is located in the heart of the Auraria College campus, and partners with MSU’s Brewing Program. This allows them the opportunity to blend traditional techniques with some more modern ideas.
The interior of the facility offers its patrons a unique view of not only the brewing process, but also some of the historic equipment, including two original, four-story tall cooper mash tuns on display in the tap room.
In addition to the renovation of the tap room and brew facility, the project also included a pilot plant brewery for testing out new beer recipes. An elaborate cooling system was designed to maintain tight temperatures during the beer aging process, which could last over 45 days. Installed piping brings fresh beer from the cellar directly to the taps in the tasting room.
